Prepared fresh on Saturday mornings by a dedicated collective of local women preserving the craft, the dish features yuzu-seasoned rice folded with flaked mackerel and pressed beneath vibrant layers of shiitake mushrooms, carrots, and sweet omelet. Sliced into bite-sized mosaic squares, each piece delivers a bright, citrusy, and savory bite of celebratory heritage.
